An easy way to eat more plants

Many of us don’t get enough plant diversity in our diets. And our microbiomes love a good variety of nature’s bounty—the more colorful, the better.

I just so happen to love cooking all of our beautiful local produce. And while I love cooking it for myself, I really love cooking nourishing dishes for other people. So I’m trying something new:

Each week, I’ll send out a dish (or dishes) of the week email. Some weeks will be soup weeks (think broccoli, turnip, and leek with a handful of pumpkin seeds). Other weeks might be a few veggie sides—like maple-roasted carrots with lemon cashew cream, microgreens, and toasted almonds. I’ll make a limited batch, and you can claim yours by replying to the email. First come, first served. Depending on where you’re located, you can pick it up or I’ll deliver.

Think of this as an easy, low-lift (or no lift) way to eat your veggies every week.
