Blistered Green Beans with Garlicky Miso Lime Sauce

This sauce, a riff on a Bon Appetit recipe, is pure, liquid gold. It’s excellent on these blistered green beans and also on many-a-charred or caramelized veggie. My favorite: roasted broccolini. Make sure to get your veggies nice and browned for maximum flavor. I’m also a big fan of tossing it on some roasted potatoes. Or make them potato wedges and use this as a tangy, umami dipping sauce. This is a super simple one!

First: Blister green beans / roast veggies (get them nice and charred / caramelized for max flavor)

Once you’ve removed your veggie of choice from heat, toss them in sauce (this was enough for amount of green beans pictured - about two big handfuls:

Sauce:
Whisk together:
1 spoonful miso (ideally mellow miso)
Juice of one lime
Drizzle of olive oil
Small clove of garlic, grated
(Optional: add drizzle of honey if you want to mellow the sauce a bit)
